We love meat loaf. In the past we used 80/20 ground chuck so there was some fat to stick the loaf together, then we added Lipton Onion Soup mix, store-bought bread crumbs, and tomato sauce. With our new soy-free diet, Lipton’s and store-bought bread crumbs were out. Also, tomato can hurt an already sensitive stomach, so we wanted an alternative.
Chicken Cordon Bleu is one of my personal favorite foods, and it’s so hard to find someone who does a good job. Years ago I learned to make my own and perfected my recipe. I very rarely make this anymore because I’ve found local places that do as good as I do with so much less effort from me.
I’ve eaten Hoppin’ John for almost every New Years Day of my life. After introducing it to Daniel, it’s a regular meal in our home. We have a simple version that we keep everything on hand for whenever possible.
